Paleo Nachos

Nachos are the classic mid-day snack to keep you sane before dinner or a great spread to put out while watching the game. Finally, this paleo-inspired rendition replaces the traditional corn-based, salt covered tortilla chips with homemade sweet potato chips! Still loaded with toppings and fun flavors, we transform this once not-so-healthy snack into one equally as delicious while substantially better for you!

While we think we cover all the bases with this recipe, if you feel like adding something else to your nachos that we might have missed, go for it! Green onion, cilantro, bell peppers, celery – they all make great additions. Consequently, here is a fantastic homemade salsa recipe, if you’re feeling adventurous!

Ingredients

Chips

  • 2 large sweet potatoes
  • Sea salt

Spicy Chipotle Chicken

  • 2 chicken breasts
  • 1 tsp coconut oil
  • ¼ tsp chili powder
  • ¼ tsp cayenne pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Other Additions

  • 1 large avocado
  • 1 jalapeno, diced
  • 3 tbsp scallions, diced

Instructions

Chips

  1. Firstly, preheat oven to 375°F and line a baking sheet with foil.
  2. Slice the sweet potatoes into thin pieces using a mandolin or perhaps a sharp knife.
  3. Grease or spray the baking sheet, laying down the sweet potatoes, and bake for 12-20 minutes or until crispy.
  4. Lastly, let your chips cool before plating.

Spicy Chipotle Chicken

  1. To begin with, slice chicken breasts into bite sized pieces.
  2. In a small bowl, add together seasonings and mix well.
  3. After that use the seasoning mix to coat the chicken pieces.
  4. Heat a medium skillet with oil.
  5. Add the seasoned chicken pieces to heat and cook until the insides are no longer pink.

Putting It All Together

  1. Firstly, plate your chips.
  2. Secondly, cut the avocado in two after that and remove the pit before mashing it in a small bowl.
  3. Finally, add the chicken, avocado, scallions, and jalapenos on top of the chips.
  4. Enjoy!
